My mother, and my grand-pap knew about salads, and how good they are for you. My mother worked on the apple salad recipe, because she had to entertain groups of people. This was a well made salad. Mom was a preacher’s wife, but she entertained deacons and their wives, and then the elders and their wives for suppers. We girls helped in the kitchen, and with serving the couples who came. They always came, because Mom would fix her version of Roast Beef. It was always tender, and delicious.
In those days we didn’t make pies, but we did serve ice cream and cookies.
