It doesn’t bother me to cook in the afternoon, and to have a small group come to dinner. They get more, and I spoil those who come. Many times we have had pork roast. I have become familiar with how to make it tender. I believe meat has to have time to cook in a slow oven. Rushing the cooking doesn’t usually work. I serve roasts, because I never know how many will be coming to the meal. I do advertise at times. Some days I can’t get to the computer. This is what happened last night. The day was too busy to stop and tell what the menu was going to be. It will always be healthy.
