I worked all day preparing a meal for the Recovery group tonight. I found a nice piece of meat. The butcher cut a bigger version of this. I payed around 30 dollars for the meat. I put Rosemary, cuman, and Italian spice on it with black pepper. I found some oil to put on the roast, and I did pray that it would be good.
The roast cooked all day. There was some time to get it down to the church, and then to put it in the oven there. Otherwise this roast cooked all day long. It was done, and the meat was not so tender that it fell apart. It was just tender.
I served baked apples, green bean casserole, gravy, roast beef, baked beans, and brownies with marshmallows and chocolate chips. Some one brought some mashed potatoes. They were creamy and good.
For the minutes after the blessing the place was stirring. The group served their plates and sat down. They did not talk. They just ate. Soon all the roast that I served was about gone. Someone asked to take their wife a plate. I let him. They were married at the church last week. She was tired and did not come tonight. I was amazed that the whole group ate, and ate. I was tickled also. When you cook all day, it is nice if your food is eaten.
Several thanked me for the meal and told me it was good. I felt awed, and blessed and still was amazed that the all day preparation took 20 minutes to eat! I was tired, exhausted, and ready to sleep. Instead we watched a movie, and relaxed . It was wonderful also.
I would fix this meal again. I tried to get an eye of round roast instead of the chuck roast. There were hardly any roasts. The eye of round roast that was left was small. I like to get a long one.Mine turn out tender, even though this is a lean cut of meat.
I came home with some of the left overs. It is always nice to have meat and other things left to take home. I am tired, but I know that I did everything I could think of to make it a good meal. It was!
